Cauliflower Alfredo

  • 1 lb cauliflower
  • 1/4 cup heavy cream
  • 1 tsp salt
  • 1 tsp fresh ground pepper
  • Parmesan cheese
  1. In a medium pot, steam the cauliflower for 10 minutes, or until the cauliflower is tender.
  2. Put the cauliflower in a vitamix or blender, add the heavy cream, salt and pepper. Blend until silky smooth. Taste, and add more seasonings if necessary.
  3. Cook your pasta, reserving 2 cups of pasta water.
  4. To serve, mix the pasta, sauce, and some pasta water. Serve in bowls and top with parmesan cheese.
